Unstuffed Thanksgiving Stuffing

3 celery stalks, chopped into bite-size pieces
1 large yellow onion, chopped finely
5 apples, chopped into 2-centimeter pieces
1 cup raisins
1 cup walnuts, chopped very coarsely
1 large loaf of old or stale bread, chopped into bite-size pieces
8 tablespoons olive oil
1 1/2 tablespoons parsley
1 tablespoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons brown sugar

1. Combine the olive oil, parsley, oregano, salt, pepper, and sugar in a bowl and mix well.
2. Combine the celery, onion, apples, raisins, walnuts, and bread in a large bowl and mix well.
3. Pour the spice mixture over the dry mixture and mix well.
4. Place the stuffing in a baking pan and cover with aluminum foil. Bake at medium-high (400 degrees) heat for 30-45 minutes, until the apples and celery are tender.
5. Remove the aluminum foil and continue to bake uncovered for 10 minutes. Serve hot.
