3 sweet potatoes
1 cup pineapple chunks, with juice
1 cup orange juice
1/8 cup brown sugar
1 teaspoon cinnamon
1. Pierce the sweet potatoes with
a fork and bake at 400 degrees for 50 minutes to an hour,
or until very soft. Set the sweet potatoes aside and let cool.
2. Cut the sweet potatoes in half lengthwise and scoop out
the flesh into a mixing bowl. Add the orange juice, and mash
or blend the mixture until it is smooth. Add the pineapple
chunks and mix again.
3. In a small bowl, mix together the brown sugar and cinnamon.
4. Scoop the sweet potato mixture into a baking dish or pie
pan, and pat down so that the top is smooth. Sprinkle the
brown sugar and cinnamon mixture on top of the casserole.
5. Broil the casserole for 4-6 minutes, until the top is crisp
but not burnt. Serve hot, warm, or cold.
