1 sheet of puff pastry dough (roughly
1 foot in diameter)
2 medium yellow onions, sliced into thin strips
1 pound mushrooms, sliced
1 tablespoon olive oil
2 tablespoons red wine vinegar
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 cup fresh parsley, finely chopped
1. Saute the onions in the red wine
vinegar for 3-4 minutes, until the onions soften.
2. Saute the mushrooms in the olive oil with the salt and
pepper for 2-3 minutes, until the mushrooms are just cooked.
3. Place the puff pastry on a baking pan and bake at 375 degrees
for 8-10 minutes, just until the dough starts to brown.
4. Remove the pastry from the oven, spread the onions on top
of it, and then spread the mushrooms on top of the onions
in an additional layer. Return to the oven and continue baking
for 5 minutes, or until the edges of the pastry are browned
but not burned.
5. Remove from the oven, garnish with the fresh parsley, slice
into smaller pieces, and serve hot.
