1 package extra firm tofu
1 head garlic
5 tablespoons lemon juice
2 1/2 tablespoons oregano
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1 green or red pepper, sliced into long strips
1 onion, sliced into long strips
1. Cut tofu lengthwise into ½ inch patties.
Cut each patty in half widthwise. Dry with paper towels and
place in a shallow tray.
2. Mix the olive oil, 2 tablespoons lemon juice, oregano,
¼ teaspoon salt and ¼ teaspoon black pepper in a cup. Coat
the tofu patties with the sauce, and place in the refrigerator
for 30 minutes to 8 hours.
3. Place the tofu patties, head of garlic (wrapped in aluminum
foil), pepper, and onion in a baking pan, and bake at 400
degrees.
4. After 10 minutes, flip the tofu patties and stir the vegetables.
5. After another 5-10 minutes, or when the tofu patties and
vegetables begin to brown, turn off the oven and remove the
garlic.
6. Squeeze or remove the roasted garlic cloves into a cup,
and mix well with 3 tablespoons lemon juice, ¼ teaspoon salt,
and ¼ teaspoon black pepper.
7. Remove the tofu and vegetables from the oven. Serve as
sandwiches on pita or flatbread, with the vegetables and lemon
garlic sauce covering the tofu patties.
