Deep South Banh Mi

A southern US version of the Vietnamese sub.

1 small green cabbage, sliced into thin strips
1 large carrot, cut lengthwise into matchstick-size pieces
1 yellow onion, sliced into thin strips
3 cloves garlic, minced
3 tablespoons vegetable oil
6 tablespoons vinegar (white or red)
3/4 teaspoon salt
3/4 teaspoon black pepper
1/2 teaspoon nutmeg
1 teaspoon cayenne pepper

1 bunch fresh parsley
fresh French sandwich baguettes

1. Saute the onion in the oil on medium heat for 2 minutes, stirring frequently.
2. Add the carrot, cabbage, and garlic, and continue sautéing for 3 minutes, stirring frequently.
3. Add the vinegar, salt, black pepper, nutmeg, and cayenne pepper, and sauté for 2 minutes more, or until the vegetables are cooked but still crisp.
4. Stuff the baguettes with the vegetable mixture and sprigs of fresh parsley, and serve hot or cold.
