2-3 cups sliced mushrooms
1 carrot, diced
2 red or green peppers, chopped
1 onion, diced
4 cloves garlic, finely chopped
1 1/2 cups tomato sauce
1 cup water
2 tablespoons sweet paprika
1 1/2 tablespoons cumin seeds
1/2 teaspoon chili pepper
1/2 teaspoon salt
1 tablespoon sugar
1-2 tablespoons canola or vegetable oil
1. In a large saucepan, saute the onion
and carrots in the oil for 4 minutes, stirring frequently.
2. Add the peppers, garlic, and cumin seeds and continue cooking
and stirring for another 3 minutes.
3. Add the mushrooms, tomato sauce, water, paprika, chili
pepper, salt, and sugar, and mix well. Bring to a simmer and
cook over medium-low heat for 10-15 minutes, stirring occasionally,
until the mushrooms are tender.
4. Remove from the heat, and serve with dumplings, bread,
rice, or noodles.
