Chili

1 can of cooked kidney or red beans
1 can of cooked chickpeas (optional)
1 can of corn
1 medium yellow onion, cut into thin slices
1 bell pepper, chopped into bite-size pieces
4 cloves garlic, chopped finely
2 cups tomato sauce
1 cup water
1 tablespoon ground cumin
1 1/2 tablespoons oregano
1 tablespoon chili powder
1 teaspoon hot sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons brown sugar
2 tablespoons white vinegar
2 pieces dark chocolate

1. In a large pot, combine the tomato sauce, water, onion, bell pepper, garlic, cumin, oregano, chili powder, vinegar, chocolate, hot pepper, salt, black pepper, and brown sugar. Bring the mixture to a boil and cook over medium high heat for 20-25 minutes, until the onions are soft.
2. Add the beans, chickpeas, and corn and continue cooking for an additional 5 minutes.
3. Remove from the heat and serve with rice.
