1 onion
1 head of broccoli
2 green peppers
1 can of corn
1 1/2 cups cooked black beans
1 tablespoon paprika
1 1/2 tablespoons oregano
1 teaspoon cumin
1/2 - 1 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
1 1/2 cups tomato sauce
burrito tortillas
1. Dice the onion, broccoli, and peppers.
2. Combine the vegetables with the tomato sauce (or tomato
paste with its equivalent amount in water), paprika, cumin,
oregano, cayenne pepper, salt, and pepper in a large saucepan.
Bring the sauce to a boil, reduce the heat, and simmer until
the vegetables are well-done.
3. Add the corn and black beans and cook for an additional
5 minutes.
4. Serve with the burrito tortillas and any other condiments.
