1/4 cup soy milk
1/4 cup canola or vegetable oil
2 cups canned pumpkin puree
1-2 cups sugar (as desired)
2 cups white flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tbsp cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon cloves
1/2 cup walnut pieces (optional)
1. Preheat the oven to 350 degrees F.
2. Lightly oil a baking pan or pans.
3. Mix the soy milk, pumpkin, oil, and sugar.
4. Mix the flour, baking soda, baking powder, salt, cinnamon,
nutmeg, and cloves.
5. Add the wet ingredients to the dry ingredients and mix.
Add the walnut pieces and mix a bit more.
6. Pour the mixture into the baking pans and bake until the
top is browned and a toothpick stuck into the bread comes
out clean (for 30-60 minutes, depending on how deep the pan
is).
