1 1/2 cups grated carrots (about 3 medium carrots)
2 1/4 cups white flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tbsp cinnamon
3/4 tsp nutmeg
grated zest of one orange
2-3 tsp grated gingerroot or 2 tsp ginger powder
1/2 cup canola or vegetable oil
1/2 cup soy milk
1/2 cup orange juice
1/2 cup maple syrup or pancake syrup
1 1/2 - 2 cups sugar
1 cup raisins
1. Mix the soy milk, carrots, oil, syrup,
juice, orange zest, ginger, and sugar.
2. In another bowl, mix the flour, baking soda, baking powder,
cinnamon, nutmeg, and salt.
3. Add the wet ingredients to the dry ingredients and mix
well. Mix in the raisins, if desired.
4. Bake in a lightly oiled pan for 35-45 minutes at 350 degrees
F, or until a toothpick stuck into the cake comes out clean.
