Chocolate
Coconut Banana Cookies (makes 24 cookies)
1 1/2 cups white flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cocoa powder
1 cup sugar
1/3 cup margarine or vegetable oil
1/3 cup soy milk
2/3 cup mashed ripe banana
1 1/3 cup shredded sweetened coconut
1 cup chocolate chips (optional)
1. In a large bowl, combine the flour,
baking soda, salt, and cocoa powder, and mix well.
2. In another large bowl, combine the sugar, margarine or
vegetable oil, soy milk, mashed banana, and 1 cup of shredded
coconut, and mix well.
3. Pour the wet ingredients into the dry ingredients, and
mix well. When thoroughly mixed, add the chocolate chips and
mix again to blend in the chips.
4. Lightly oil a couple baking pans. Scoop out balls of 3-4
tablespoons of dough and place each ball on the baking pan,
spaced 2-3 inches apart. Sprinkle the remaining coconut on
top of each ball, and then flatten the balls with a spoon
into 1-inch thick discs.
5. Bake for 12-18 minutes, just until the tops of the cookies
are firm to the touch.
