1/4 cup soy milk
1/4 cup canola or vegetable oil
3-4 mashed ripe or overripe bananas
1-2 cups sugar (as desired)
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 tsp vanilla extract

1. Preheat the oven to 350 degrees F.
2. Lightly oil a baking pan or pans.
3. Mix the soy milk, bananas, oil, vanilla, and sugar.
4. Mix the flour, baking soda, baking powder, and salt.
5. Add the wet ingredients to the dry ingredients and mix.
Add the chocolate chips and mix a bit more.
6. Pour the mixture into the baking pans and bake until the
top is lightly browned and a toothpick stuck into the bread
comes out clean (for 25-50 minutes, depending on how deep
the pan is).
