Orange Honey Cream of Wheat
(one serving)

1 1/2 cups soy milk
1/2 cup orange juice
1/4 teaspoon salt
1 /3 cup cream of wheat
5 tablespoons honey
1 large orange, peeled, sectioned, and cut into inch-long pieces
cinnamon

1. In a small or medium saucepan, combine the soy milk, orange juice, and salt, and bring to a boil.
2. Lower the heat, and gradually pour in the cream of wheat while stirring.
3. Add the honey, and let simmer for 2 minutes, stirring frequently.
4. Add half of the orange pieces, mix well, and continue cooking and stirring for another minute, or until the cream of wheat has thickened.
5. Remove from the heat, and pour the cream of wheat into soup bowls. Place the remaining orange pieces on top, sprinkle with a few dashes of cinnamon, and serve hot.
