1 cup soy milk
1/3 cup orange juice
1/4 cup vegetable or canola oil
1 teaspoon vanilla extract
1 1/2 cup white flour
1/2 cup wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon arrowroot powder
1 orange, peeled and sectioned
1 teaspoon grated orange rind
1/3 cup pecans
1. Place the orange sections in
a blender or food processor, pour the pecans on top, and blend
for a few seconds, just until all the orange sections and
pecans are chopped into smaller pieces.
2. In a mixing bowl, combine the flour, baking powder, baking
soda, salt, and arrowroot powder, and mix well.
3. In a separate bowl, mix the soy milk, orange juice, oil,
and vanilla.
4. Pour the liquid into the flour mixture and stir well, until
most lumps are gone.
5. Add the chopped orange, orange rind, and pecans, and mix
well.
6. Pour batter into waffle iron, cook, and serve with maple
syrup.
