Apple Topping:
2 apples (Granny Smith or other baking apples work best)
1 tablespoon cinnamon
1/4 cup sugar
1/4 cup brown sugar
Pancakes:
1. In a mixing bowl, combine the flour, salt, baking powder,
cinnamon, ginger, and nutmeg, and mix well.
2. In a separate bowl, mix soy milk, oil, molasses, and brown
sugar.
3. Pour the liquid into the flour mixture and stir well, until
most lumps are gone. Add additional soy milk or flour if needed,
until the mixture pours easily (if the first pancake you make
doesn't spread out into a circle naturally, your mixture is
too thick).
4. Lightly oil a frying pan and place over medium-high heat.
When the pan is hot, pour 1/4 cup batter or desired amount
onto pan. Cook just until smoke starts to rise from underneath
the pancake, then flip. Cook on the otherside just until the
pancake starts to smoke, then remove from heat. The pancakes
should be golden brown but not burned - adjust cooking time
if pancakes appear under or over cooked.
5. Place pancakes in a covered bowl or container until ready
to serve.
Topping:
1. Peel and core apples, and cut into 1/2 inch pieces.
2. Place all the ingredients in a small saucepan, mix well,
and heat until the mixture comes to a gentle boil.
3. Reduce the heat and cook until the apples are soft, stirring
often.
