Banana Nut Pancakes

Pancakes:
1 1/2 cups flour
1/4 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon nutmeg
1 tablespoon canola oil
2 cups soymilk
2-3 tablespoons brown sugar
1/2 cup walnuts, very finely chopped

Banana-Nut Topping:
2 bananas, peeled and chopped into slices
1 cup walnuts, coarsely crushed
1/4 cup honey
1/4 cup sugar
1/4 cup brown sugar
1/2 teaspoon cinnamon

Pancakes:
1. In a mixing bowl, combine the flour, salt, baking powder, walnuts, and nutmeg, and mix well.
2. In a separate bowl, mix the soy milk, oil, and sugar.
3. Pour the liquid into the flour mixture and stir well, until most lumps are gone. Add additional soy milk or flour if needed, until the mixture pours easily (if the first pancake you make doesn't spread out into a circle naturally, your mixture is too thick).
4. Lightly oil a frying pan and place over medium-high heat. When the pan is hot, pour 1/4 cup batter or desired amount onto pan. Cook just until smoke starts to rise from underneath the pancake, then flip. Cook on the otherside just until the pancake starts to smoke, then remove from heat. The pancakes should be golden brown but not burned - adjust cooking time if pancakes appear under or over cooked.
5. Place pancakes in a covered bowl or container until ready to serve.

Banana-Nut Topping:
1. Heat the sugar, honey, and cinnamon in a small saucepan over medium heat. After 5 minutes, or when the mixture begins to boil, reduce the heat to low.
2. Add the bananas and walnuts and continue cooking over low heat for an additional 3 minutes, or until the sugar is completely melted.
